As a brief explanation to the above map, Italy has had a troubled history over the last 2000 years. As the Roman Empire fell, the north-east got taken over by Germans. It still speaks German, and drinks beer. Spätzle is an Austrian pasta. The Italian northwest has been under French domination, off and on and it shows in the thick cream sauces. The south was controlled by the Moores for 1000 years, leaving dishes with fennel and olives. And then there is the amazing innovation: the tomato, a gift from Spanish America that seems to have found its home on the eastern seaboard, though Spain controlled the west. I don’t know why.
